The atmosphere is serene in this residence that used to belong to the earls of Toulouse, ochre and crimson tapestries decorate the walls in the finest ways, the place seems to always have been here, the archways, stone walls and openings all contribute to creating surprising perspectives or harmonious and intimate volumes in this very interesting building... The dining room is luminous, all in blue and stone, plants also play an important yet subtle role.
The space reflects Michel’s cuisine, a perfect harmony where the new and privilege work alongside... Where magic pen and choice of colours deliciously mix with texture and flavour! Subdued, refined, elegant, all are major terms to describe L’Aubergade.
In the evening, you’ll feel as if in the middle of a fairy tale, thanks partly to a very smart spraying system, installed along the roof and creating a refreshing fog curtain outside... very spectacular!
Michel works in a tireless creative fashion, and changes the menu four times a year according to changes in products and in taste. If you provide this Chef with a table and a pen, he will change a dish’s presentation in front of you; if you stroll along a path he will find the plant or mushroom that will dominate tomorrow!
