Just like the Eiffel Tower, Paul Bocuse is open every day of the year.
And just like the Tower, you can see the restaurant from far away. Its vibrant pink and pistachio green façade is a marker on the horizon, it looks like a theatre décor, decorated with multi layer dishes and cakes, of pyramids of food the illustrations of which are borrowed from Antonin Carême’s dictionaries, he was one of the great founders of French gourmet cuisine. A dinner at Collonges is a bit like going to the circus in the world’s largest circus tent: the show is amazing, the artists know their bit by heart, all parts of the show work smoothly, in time and space. Approaching the Bocuse temple is just like an introductory journey to the highest spheres of French gourmet cuisine. It is a picture of the great Chef himself that dominates the car park, leaning on a balustrade at a fake window, surrounded by two real street lights. Twelve steps lead you to the “cour d’honneur”. You will be welcome there by an 80 meter long fresco, “Chef Street”, paying tribute to Chefs who have been great in their time: Carême, Fernand and Mado Point, mere Brazier, the Pic, Bise, Troisgros and Chapel, not forgetting Raymond Oliver. And last but not least the Bocuse family, father, mother, wife, daughter, son and the whole team making the glory of Collonges. When you have passed this glorious starter, and before you get to the heavy door, you will walk on the thirty engraved bronze plates, with the names of all those who have won the famous Bocuse d’Or award. You finally reach the red clad doorman, always welcoming you with a smile. There are then a number of rooms available for private events, family-linked or professional. In the hall, under the framed Meilleur Ouvrier de France awards, a glass wall opens up to the kitchen, shining with all its copper. You see assistants stirring sauces, prepare the stuffing, the poultry, cut the vegetables at the speed of early movies... Is there any need to present Paul Bocuse’s cuisine ?
