As for the Chef, Olivier Dulac, he spent ten years in the West Indies, St Martin to be precise, which is quite unusual in his profession. That is where his inspiration comes from, a rare mix of tradition and exotic flavours. Olivier is scared of nothing, and least of all of innovating; armed with his daring and his talent, this Chef could really turn a regular lettuce into gold! This establishment lets imagination run free, with specialties from the region, grilled meat and a thousand different flavours on the programme.
