You are here at Hubert’s place...
He used to be one of France’s finest cheese merchants and then became a Chef whose talent was well known. Hubert now lives in the Gers region and is happily retired...
But wait a second! His bistro and Paris are so dear to him that hardly a week will go by without him returning to the kitchens of this pretty restaurant, making a show of bottled preserves and chequered table cloths, reminding of a traditional farm in the Landes region.
The cuisine is of course most interesting here, Hubert has not lost any of his talent: little crab cakes, pimientos stuffed with brandade, pig’s feet galette with oyster mushrooms and truffle juice, specialty of caramel with salted butter and its apple zephyr. And the most amazing here is certainly the kitchen show!
The kitchen is open for everyone in the dining room to see, the idea has often been copied, but Hubert is its inventor! It is absolutely an address not to be missed, no ceremonies here, just a delicious mix of flavours, a pleasure for the taste buds, along with a very good service and welcome.
The ideal gourmet composition takes up Hubert’s most famous themes, and is an ideal discovery of this little Parisian yet country-like bistro!
