Eric Delerue, member of the «Jeunes Restaurateurs d’Europe» association is its Chef and he composes an inventive cuisine, positively beaming and full of sunshine. His first reward is the satisfaction of his guests, and he would go to any lenghts to achieve his goal...
He is originally from the region, very talented and a lover of grande cuisine; he likes to work with products from his region, fish from the local boats coming into Boulogne harbour, meat from local breeders or game when it is season for it.
His cuisine is luminous, not traditional but not avant-garde either; it is simply a cuisine of its time, choosing juices instead of heavy sauces, salty flavours from the sea, sweet and sour mixes, a light kind of cuisine where cooking time is an essential element and where the South is certainly an influence. As Eric, Isabelle and their team like to say, it is a cuisine that “appeals to your taste buds, modernizes classical recipes with a wink, mixes flavours in the most delicious ways...”
For her part, discreet but always smiling, Isabelle Delerue is in charge of the service in a dining room breathing of happiness and joie de vivre.
