Stéphane Derbord took on an ambitious challenge when taking over this well known restaurant on the Place Wilson in Dijon.
A former post relay in the 17th century, it is now the place to be in town. The customers are business locals and the Dijon bourgeoisie, very attached to local cuisine and its traditions, and even if Stéphane Derbord sometimes likes to include reminders of his time at Guy Savoy or at the Fouquet’s in his cuisine, he mostly respects Burgundy traditions and is now trusted both by regulars and by more occasional visitors.
