If the Cheval Rouge is famous it is partly thanks to Louis XVIth who stopped there in 1791 to taste the excellent local specialty that was known throughout the world at the time, pig trotters. That was not such a good idea since the post master, Jean Baptiste Drouet, recognized him and denounced his escape! We know the rest of the story, the king was arrested and beheaded. The postal relay plays its role through the centuries of world embassy for pig trotters. History repeating when Mr and Mrs Fourreau are on their way home from Rio and New York; they stop here to taste the local specialty. They are professionals and were in exile for Lenôtre whose services and talent they were promoting on the other side of the Atlantic. They like the establishment and stay there. The Chef is talented, he works hard to have tradition live on. The establishment is proud of its specialty and really wants to promote it with higher instances but it is impossible. Politicians don’t like pig trotters anymore, sadly enough for them! Mathieu Fourreau and his wife are now in charge for the next 50 years… For the practical side, the Cheval Rouge boasts a majestic dining room with a divine fire place. The king could have hidden there without going out of his carriage, and there is also a large reception room. Seminars or weddings are welcome here and everybody is satisfied with the ideal gourmet menu offering, you will have guessed, the local specialty at a reasonable price, that of excellence and tradition. An ideal gourmet favourite!
