The beautiful hills of the Jurançon region hide a pretty Béarn farm building with its towers and galeries.
Chez Ruffet is a well known gourmet address and has been so for a long time. When Stéphane Carrade settles here at the end of the last century, it is truly a way back to his roots and that is most welcome. Just like a number of Chefs of his time, Alain Passard among them, he got his taste for gourmet cuisine from his grand mother, who taught him a passion for cuisine at a very young age. Some prestigious establishments contribute to take his talent further: the Hilton in Londes, Château du Domaine Saint Martin in Vence, Ferme Saint Simeon in Honfleur and Jean Bardet in Tours, not forgetting a spicy stop on the island of La Réunion.
Now that he is finally his own master, this inventive and talented Chef surrounds himself with a very motivated and efficient team. They really do their utmost to satisfy the client at all times, and that goes even for the most demanding customers. Of course the place itself is an invitation to relaxation and well being: beautiful farm buildings, two nicely separated dining rooms with a patio between them where sunshine and flowers are very present. The very pleasant private dining room at the back is nicely decorated and boasts nice lighting for a work session or a family reunion.
The main dining room is superb with a high fireplace of flat stones. The care that goes into selecting crockery and presentation is impressive.
As for the cuisine you will be dazzled and this Chef, noticed by the serious Prosper Montagné club, shows his talent and expresses his wishes. He offers a modern cuisine of the region, he mixes recipes from yesterday with more modern touches but he is still an artist of traditions. “I do what I like first and foremost, I start from a solid base because my customers like classics, with some moderately modern touches. Cuisine has to be edible and people must be able to understand it.” It is all in that quote, this tasting menu with 7 passages is really necessary to understand and to feel, like and judge this very nice solution, a mix of authenticity and elegance, respecting the quality/price ratio, it is worth to underline it.
