Above all, going to Les Flots means accepting a décor, and an imposing one at that: we are speaking of La Rochelle, a medieval town, marked by a history of wars, occupations and discoveries that have contributed to making the city what it is today, rich of its fishery, its tourism and its past.
And it is precisely right in the heart of town, at the foot of the Tour de la Chaîne and facing the old harbour, that you will find Les Flots. The establishment has always been a part of the landscape in La Rochelle, but has been through a small revolution recently… mostly the work of Grégory Coutanceau. This young talented chef took over in 1997, after having been on apprenticeship with the greatest Chefs of his time (Ducasse, Frédéric Anton…).
The décor has changed, it is semi-modern, semi-traditional, you will find an old fireplace right beside modern design furniture. The Chef now applies what he has learnt with talent and passion, the result is a cuisine of products, the best ones, selected each day at the fish market… And then the brilliant Chef works his magic, he chooses Mediterranean influences, mixing flavours and spices to charm your taste buds. If to that you add a perfect welcome and service and an ideal gourmet menu created to make you discover and taste the best, you will no doubt have excellent memories of Les Flots… and of La Rochelle!
